PULIHORA / TAMARIND RICE


Pulihora or Tamarind Rice is a common preparation of rice in the South Indian States. Pulihora is a very popular and traditional preparation of the Southern States of India.  Puli means sour taste, hence the name Pulihora, as it is made with tamarind gravy mixed with rice.  This rice-based dish with a wonderful taste.

This rice based dish is usually cooked on special occasions and on festival days, and is also offered to God as part of prayers known as prasadam in most of the Southern Indian Temples as well as in homes.

This is also one of the most popular food served as prasadam during the days of Ganesh Chaturthi.  And it was often considered a strong stimulant for dead tongue.

Pulihora is simple and easy to cook and gastronomic and tasty with a sour and salty taste and a cheap and poor man’s feast.  It’s a great taste that comes from Ingredients such as red chilies , curry leaves , coriander leaves, hing and green chilies.

This meal can be eaten for breakfast,lunch or dinner at any time. Pulihora dish can be cooked in several ways, not only with Tamarind pulp ,but also with mango pulp, and lemon juice.

PULIHORA / TAMARIND RICE

  • 3 CUPS BOILED RICE
  • 2 tbsp OIL
  • 1 tbsp CHANA DAL
  • 1 tbsp PEANUTS
  • 1 tbsp URAD DAL
  • 4 GREEN CHILIES
  • 1 tbsp MUSTARD SEEDS
  • 5 RED CHILIES DRIED
  • 10 CURRY LEAVES
  • 1 tbsp TURMERIC POWDER
  • 1 TAMARIND LEMON SIZE
  • 1 PINCH HING
  1. Keep cooked Rice in Bowl and keep it aside

    Take the size of the lemon tamarind and soak it for one hour orboil it to extract the juice quickly.

    After one half hour or more , press all the pulp out of the tamarind and strain the tamarind to remove the juice.

    Remove the tamarind pieces and add the extracted pulp and keep it aside.

    Now for tempering Take a pan/wok and add oil and heat it on low flame

    Now add peanuts , chana dal, urad dal,slitted green chilies ,mustard seeds,red chilies and saute it for few minutes and add curry leaves after few seconds add tamarind Juice/pulp and cook it for a minute.

    Now add salt ,hing ,and turmeric powder and mix it for a while and cook it for few minutes.

    Now add cooked rice and mix it up well with all the tempering and mix well and transfer the recipe to other fresh bowl and serve hot .
