CHAMADUMPA EGGURU/ARBI FRY
- 250 GRAMS CHAMADHUMPA/ARBI
- 1 ONION (WELL CHOPPED)
- 4 GREEN CHILIES (WELL SLICED)
- 1/4 Tea Spoon MUSTARD SEEDS
- 1/4 Tea Spoon JEERA/CUMIN SEEDS
- 8 CURRY LEAVES
- 1/2 Tea Spoon TURMERIC POWDER
- 2 Tea Spoon RED CHILLY POWDER
- 2 tbsp OIL
- SALT (PER TASTE)
CleanChamadhumpa /Arbi in running water neatly and keep it aside
Take a big size onion and chop it well along side green chilies and keep it aside
Now take bowl and add water and warmth it on medium flame for a second and add Chamadhumpa /Arbi and boil it for couple of minutes.
And cut the flame and take away Chamadhumpa/Arbi from boiled water and put it during a cool water for couple of minutes.
Now remove Chamadhumpa /Arbi from cool water and peel the skin carefully and chop it into medium size and keep it aside.
Now take a pan and add oil and warmth it on a coffee flame for few seconds and add mustard seeds , red chilies , cumin seeds and permit it to splutter.
Now add well chopped onion and green chilies and fry it for a short time until onions change its color to light brownish and now add curry leaves and saute it for few seconds.
Add boiled and well chopped Chamadhumpa /Arbi and saute it well for a short time and add turmeric powder , red chili powder and salt and saute it well for few minutes .
Finally transfer the receipe into a bowl and serve it with hot boiled rice.
