VANKAYA/BRINJAL FRY HOME STYLE

  • 250 GRAMS VANKAYA/ BRINJAL
  • 1 ONION (WELL CHOPPED)
  • 4 GREEN CHILIES (WELL CHOPPED)
  • 1/4 INCH GINGER (WELL CHOPPED)
  • 3 Tea Spoon OIL
  • 1/4 Tea Spoon MUSTARD SEEDS
  • 1/4 Tea Spoon JEERA/CUMIN SEEDS
  • 1/4 Tea Spoon URAD DAL
  • 5 CURRY LEAVES
  • 2 Tea Spoon RED CHILI POWDER
  • 1/4 Tea Spoon TURMERIC POWDER
  • SALT (PER TASTE)
  1. WashBrinjals during a running water two or 3 times and chop into pieces and keep it in water.

    Chop Onions and green chilies and keep it aside.

    Now make chopped green chilies and garlic as katcha paste and keep it aside

    Now take a pan and add oil and warmth it on low flame for seconds and add Mustard , cumin seeds ,urad dal and curry leaves and stir it for a short time until the seeds splutter.

    Now add well chopped onions and fry it for a short time until the colour changes into light brownish , now add green chili and ginger katcha paste and mix and fry it for few minutes.

    Now add chopped Brinjals and mix it well and fry it until they cooked and becomes soft now add turmeric powder , red chili powder and salt and mix it well and cook it on a coffee flame for couple of minutes and switch of the flame.

    Finally you'll serve the recipe with hot rice or chapathi.
