LIMA BEANS AND BRINJAL CURRY

  • 5 BRINJAL (WELL CHOPPED)
  • 2 ONIONS (WELL CHOPPED)
  • 4 GREEN CHILLIES (WELL SLICED)
  • 1 TOMATO (WELL CHOPPED)
  • 2 CUPS LIMA/BUTTER BEANS
  • 1 tbsp GARAM MASALA
  • 1 tbsp GINGER AND GARLIC PASTE
  • 1/2 tea spoon TURMERIC POWDER
  • 1/2 tea spoon MUSTARD SEEDS
  • 1/2 tea spoon JEERA/CUMIN SEEDS
  • 3 tbsp OIL
  • 3 RED CHILLIES
  • 4 CURRY LEAVES
  • 1 tbsp RED CHILLY POWDER
  • CORIANDER LEAVES (WELL CHOPPED)
  • SALT (PER TASTE)
  1. Firstly soak Lima beans over night and drain complete water and cook during a autoclave or boiled water until they turned soft and keep it aside during a small cup or bowl.

    Now wash and chop brinjal into small pieces and keep it aside during a bowl of water and chop onions, tomato and green chillies and keep it aside.

    Now take a pan and warmth it on a coffee flame and once it heats up add cumin seeds , mustard seeds,red chillies and cury leaves and saute it for few seconds and once seeds starts spluttering add ginger garlic paste and stir it for a short time and add well chopped onion and fry it until it become light brownish.

    Now add well chopped tomato and fry it for a short time and now add turmeric powder ,red chilli powder, Salt and Garam masala and blend it well on keep it on a coffee flame for few seconds.

    Now add well chopped brinjal and well cooked Lima beans and canopy it and cook it for couple of minutes and now finally transfer the recipe( see the recipe properly cooked or not) into a bowl and garnish with coriander leaves.

    Now you'll serve the prepared recipe with Hot rice orChapathi/Roti.
