BENDAKAYA /LADY FINGER PULUSU

  • 1/4 KG BENDAKAYA/LADY FINGERS
  • 2 ONIONS (WELL CHOPPED)
  • 4 GREEN CHILIES (WELL SLICED)
  • 1 TOMATO (WELL CHOPPED)
  • TAMARIND (SMALL LEMON SIZE)
  • 6 CURRY LEAVES
  • 1/2 tea spoon FENUGREEK/MENTHI SEEDS
  • 1 tea spoon TURMERIC POWDER
  • 1 tbsp RED CHILLY POWDER
  • 2 tbsp OIL
  • SALT (PER TASTE)
  • 1/2 tea spoon JEERA/CUMIN SEEDS
  • 3 RED CHILLI
  • 1 tbsp JAGGERY/ SUGAR
  • CORIANDER LEAVES (WELL CHOPPED)
  1. Take Tamarind and rinse and soak during a cup of water and take away the pulp and keep the juice aside

    Wash Lady fingers in running water and clean it with kitchen cloth and chop them to 1 inch size and keep aside

    Take Onions and chop it well along side tomato and slice green chillies and keep it aside.

     

    Now take a pan and add Oil and warmth it on a coffee flame and add red chilies ,fenugreek/menthi seeds and curry leaves and fry them for a short time and add well chopped onions ,sliced green chillies and fry it until onions become light brownish.

    Now add turmeric powder , salt, red chilli powder and blend it well and add well chopped tomato and fry it until turns completely mushy and now add coriander powder and blend it for couple of minutes.

    Now add chopped ladyfingers/bendakaya and fry it for few minutes.

    Now pour the tamarind water (juice) and half spoon Jaggerypowder /sugar and blend it well and cook it couple of minutes and canopy it cook on low flame for five minutes.

    Now add one or one and half cup of water and cook for couple of minutes on a coffee flame until bendakaya /lady finger cooked and become soft.

    Finaly garnish the recipe with well chopped coriander leaves and serve it with hot rice.
