VANKAYA TOMATO DOSAKAYA PACHADI
- 1 TOMATO (WELL CHOPPED)
- 3 BRINJAL (SMALL WELL CHOPPED)
- 1 YELLOW CUCUMBER/DOSAKAYA (PEELED AND CHOPPED INTO SMALL PIECES)
- 19 GREEN CHILLIES
- 1/4 tbsp TURMERIC POWDER
- SALT (PER TASTE)
- 1 tbsp OIL
- 2 tbsp CORIANDER LEAVES (WELL CHOPPED)
- 1 tbsp URAD DAL
- 1/2 tbsp MUSTARD SEEDS
- 1/2 tbsp JEERA/CUMIN SEEDS
- 2 RED CHILLI
- 6 CURRY LEAVES
- TAMARIND (pinch)
Wash Brinjal, Green Chillies and Tomatoes in running water and chop them into small pieces.
Wash Dosakaya / Yellow cucumber and peel the skin and dig smallpieces and keep aside
Now take a pan and add little oil and fry Tomato , Brinjal ,green chillies and tamrind in low flame for jiffy , and add salt , turmeric powder and fry it for few seconds and keep it aside.
Now Grind the vegetable mixture roughly /smooth and add small Dosakaya Cucumber pieces and blend it well.
Now take the pan and add oil and warmth it on low flame for few seconds and add Red chillies , Mustard , cumin/jeera seeds, Urad dal and curry leaves and fry it for a short time and add this to prepared mixture and garnish with chopped coriander leaves.
