BRINJAL FRY

ANDHRA STYLE

  • 500 GRAMS BRINJAL (LONG)
  • I INCH GINGER (WELL CHOPPED)
  • 1 ONION BIG (WELL CHOPPED)
  • 10 GREEN CHILIES (WELL CHOPPED)
  • 1 tbsp RED CHILLY POWDER
  • 1 tbsp TURMERIC POWDER
  • 1/2 tbsp DHANIA POWDER
  • SALT (PER TASTE)
  • 1 tbsp MUSTARD SEEDS
  • 1 tbsp JEERA/CUMIN SEEDS
  • 2 tbsp OIL
  • 6 CURRY LEAVES
  • 3 red
  1. Clean Brinjals in running water and remove stem and cut into long slices keep it in a water bowl. And make chopped onions , chopped ginger , green chilies and make kachcha paste and keep it aside Take a Frying pan and add Oil and heat it for a few seconds and add mustard seeds , cumin seeds, red chilies, and stir it for a few seconds and add curry leaves in a low flame. After few seconds add warm brinjal slices and stir it for a few seconds, and add red chili powder , turmeric powder , salt and stir it for a few seconds and cover the frying pan with lid and cook for a few minutes and remove the lid and add dhania powder and stir it for a few minutes in a low flame. And serve it in a serving plate.
